a few updates, a few things to say, I'll be updating twice today, because I'd like to dedicate this post strictly to the creation of our Waldorf Salad.
Our review...it was delicous! We as always of course also altered the classic recipe quite a bit.
We used the skeleton recipe from http://www.allrecipes.com/

Their Recipe My Rendition
1/2 cup mayonnaise
1 tablespoon white sugar
1 teaspoon lemon juice
1/8 teaspoon salt
3 apples -- peeled, cored, and chopped
1 cup thinly sliced celery
1/2 cup chopped walnuts
1/2 cup raisins (optional)
My Rendition of the Recipe
1 cup Low fat Mayo
forget refined sugar, fruit is sweet enough!
2 table spoons Lemon Juice
a dash of sea salt
2 medium sized gala apples cored, peeled and chopped
1/2 we like pecans
Shredded chicken (Optional)
DIRECTIONS
Whisk together the mayo and the lemon juice (prevents curdling)
then just add everything in piece by piece gently turning the mixture over to nicely coat everything.
Place on a nice bed of romaine lettuce and enjoy!
or chill and enjoy later!
I like this one, sometimes we substitute the mayo with vegannaise and its just as delicious!
